Bake Something Cozy: Pumpkin Muffins

There’s nothing quite like the smell of fresh pumpkin muffins baking on a crisp fall morning. They’re soft, lightly spiced, and perfect for breakfast or an afternoon treat.

You’ll need:

  • 1¾ cups all-purpose flour

  • 1 cup pumpkin puree (fresh or canned)

  • ½ cup sugar

  • ¼ cup brown sugar

  • 2 eggs

  • ½ cup melted butter or coconut oil

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • 1½ tsp cinnamon

  • ½ tsp nutmeg

  • ¼ tsp salt

Directions:

  1. Preheat oven to 350°F and line a muffin pan with paper cups.

  2. In one bowl, whisk together the flour, baking soda, salt, and spices.

  3. In another bowl, mix pumpkin puree, sugars, eggs, butter, and vanilla.

  4. Combine wet and dry ingredients just until blended—don’t overmix.

  5. Spoon into muffin cups and bake for 18–22 minutes, or until golden.

Pair with a cup of coffee and a view of San Antonio’s fall colors—pure comfort.

 

 DIY Fall Décor: Pumpkin Candle Holder

Turn your leftover pumpkin into a natural candle centerpiece that adds warmth to your home—perfect for open houses or cozy evenings.

Materials:

  • 1 small to medium pumpkin

  • 1 tea light or small candle

Spoon or scoop

  • Knife

  • Optional: twine, ribbon, or cinnamon sticks

Steps:

  1. Cut off the top and scoop out the center.

  2. Carve a shallow space for your candle.

  3. Light it for a warm glow, or decorate with twine and cinnamon for a seasonal touch.

  4. When the pumpkin softens, compost it or place it in your garden for the wildlife to enjoy.
